- 100g chicken breast( cut into pieces)
- 5 baby carrot
- 1 whole maize
- 50g pad thai
- 1 green capsicum
- 1 pak choi
- a few strands of spring onions
- 1 onion
- 2 garlic cloves
- 1 small ginger
- salt and pepper
- 1/2 tsp chilli powder
- 1 tbsp fish sauce
- 3 strands of thyme
- 1tbsp olive oil
- 2 1/2L water
Steps:
1) Steam or boil the maize for 30 minutes. Once cool, remove the seeds.
2) Marinate chicken for 30 minutes with fish sauce, salt and pepper and chilli powder.
3) Cut the vegetables; slice onion, capsicum, carrot, garlic, ginger and spring onion and set aside.
4) Cut the pak choi leaves in big pieces.
6) Add in the vegetables and stir on high heat and let cook for 3 minutes. Add the water and let the vegetables cook further for another 15 minutes.
8) Add the pad thai and cook for another 2 minutes only.
